Sweet Potato Avocado Toast w/ Crispy Chickpeas

This Sweet Potato Avocado Toast recipe is the perfect gluten free alternative to bread. This has been one of my favorite Lunch and even Dinner Options when I'm feeling a like I need a pick me up and just in the mood for clean-eating.

 

Here's a recipe for Sweet Potato Avocado Toast with Crispy Chickpeas and Cilantro Lime Sauce:

Ingredients:

For the Sweet Potato:
- 1 large sweet potato, about 1/2 inch thinly sliced
- 1 tablespoon olive oil
- Salt and pepper to taste

1 Avocado

For the Crispy Chickpeas:
- 1 can (15 ounces) chickpeas, drained and rinsed
- 2 tablespoon olive oil
- 1 teaspoon each of  smoked paprika, Garam Masala*, Chili Powder
- Salt and Pepper to taste

For the Cilantro Lime Sauce:
- 1/2 cup fresh cilantro, chopped
- Juice of 1 lime
- 3-4 tablespoons olive oil
- 2-3 cloves garlic, 
- Salt and pepper to taste 

- Half of a jalapeño (to make it spicy)




Instructions:

Preheat Oven to 450°F (200°C)

1. Steam the sweet potato slices:  Arrange the sweet potato slices in the bottom of pan/skillet and cover with 1 inch of water. Add lid and steam over medium heat for 8-10 minutes or until tender. Remove from pan wipe any access water and add olive oil to pan, season sweet potato slices with S&P and pan fry on each side. Remove from heat and set aside.

2. Prepare the crispy chickpeas: While the sweet potatoes are steaming, preheat the oven to 450°F (200°C). Pat the chickpeas dry with paper towels to remove excess moisture. In a bowl, toss the chickpeas with olive oil, smoked paprika, garam masala, chili powder, salt and pepper until evenly coated. Spread the chickpeas in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes or until crispy, shaking the pan halfway through baking.

3. Make the cilantro lime sauce: In a blender or food processor, combine the chopped cilantro, lime juice, olive oil, minced garlic, jalapeño (if adding), salt, and pepper . Blend until smooth. Adjust seasoning to taste, if needed add a couple teaspoons of water to thin sauce, whichever is your preference ( I like mine on the thicker side)

4. Assemble the Sweet Potato Avocado Toast: Spread sliced or mashed avocado evenly on each slice of toasted Sweet Potato. Top with steamed sweet potato slices and crispy chickpeas. Drizzle with cilantro lime sauce.

5. Serve the avocado toast immediately, garnished with additional cilantro and lime wedges on the side for squeezing over the toast.
