Coconut Chia Seed Pudding

During my pregnancy I've been obsessed with Coconut! I've been trying to figure out what I can grab and go for the days I'm rushing to all of my many doctors appointments in the morning! Overnight Oats came to my mind and also Chia Seed Pudding! I tested this recipe and OMG I'm in love!

 

 

 


Ingredients

14 oz - Organic Coconut Milk (we used canned)

5 Tbsp.- Chia Seed (trust me it doesn't look like a lot but they def plump up)

1 tsp.- Vanilla Extract

1-2 Tbsp. Maple Syrup

tiny pinch of sea salt or kosher salt

Fruit/butters/granola of your choice for toppings! ( I added strawberries and some honey, DELICIOUS!!)

Instructions

1. Combine all ingredients in bowl, give it a good whisk.

2. Chill Overnight in same bowl or transfer to airtight containers for on the go ( I used jam containers we save, mini mason jars would work great in this instance as well. If you don't then no biggie)

3. In the morning, stir once to evenly distribute, taste and add more Maple Syrupif you would like it more sweet. Add toppings of your choice and enjoy!!!
