The BEST Banana Coconut Crunch Muffins

These babies right here... are legit my favorite muffins! Adults love 'em, kids love 'em, they are packed with so much goodness! You can't stop at one! The first time I made these delicious little guys I was visiting my grandmother in Rosarito Beach, Mexico back in 2012 and I knew I found something special! We used to bake together when I was young, she actually bought me my first baking kit... an easy bake oven!  Using that thing only made my love for baking and cooking that much stronger! These muffins are soo moist and honestly melt in your mouth! Packed with bite sized bananas chunks, granola, walnuts, and coconut shreds your taste buds will definitely thank you! The best thing about this recipe is that you can kind of mix and match ingredients for instance if you don't like coconut shreds or walnuts, but some mini chocolate chips in or maybe some pecans instead. Now I'm not saying put the whole kitchen sink in there but you've got some wiggle room to work with.

Ingredients 

(you can put a check once you've completed/added an ingredient)

3 cups all-purpose flour

2 cups sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 pound unsalted butter, melted and cooled

2 extra-large eggs

3/4 cup whole milk

2 teaspoons pure vanilla extract

1 cup mashed ripe bananas (2 bananas)

1 cup medium-diced ripe bananas (1 banana)

1 cup small-diced walnuts 

1/2 cup granola

1 Cup sweetened shredded coconuts

Dried banana chips, granola, or shredded coconut on top, optional

 

Directions:

 Preheat the oven to 350 degrees F.

  1. Line 18 large muffin cups with paper liners. Sift (if you don't  have a sifter, simply but your dry ingredients in a bowl and give them all a good whisk to evenly distribute ) the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.                                                   
  2. Fold the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Top each muffin with dried banana chips, granola, or coconut, or chocolate chips, if desired. Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan, and enjoy!! 😊
